This tasty, healthy recipe is quick to prepare and ideal for a mid-week dinner.
4 x chicken breast fillets, approx. 180g each
800g cherry tomatoes
160ml balsamic vinegar
80g brown sugar
8 garlic cloves, skin on
Basil leaves and marinated feta for serving
Extra virgin olive oil for drizzling
Preheat the oven to 200°C and heat a saucepan over medium heat. Add the sugar and balsamic vinegar and cook while frequently stirring for two or three minutes until reduced.
Line a baking tray with nonstick baking paper and place chicken, garlic and tomatoes onto the tray, brush with balsamic mixture and drizzle the garlic and tomatoes with oil and remaining balsamic.
Baked chicken for 20 minutes until cooked through and golden.
Serve chicken with basil leaves and marinated feta.
