Sweet Potato Gratin
This recipe makes a great side dish for any meal.
Ingredients
¼ cup melted coconut oil
1kg of sweet potato, cut into 1cm pieces on the round
2tsp sweet paprika
1 cup coconut cream
2 cloves crushed garlic
1tsp black pepper, turmeric and sea salt
Sesame seeds that have been toasted, dukkha or crushed walnuts to serve
Instructions
- Preheat oven to 180°C and toss sweet potato pieces in bowl with coconut oil, garlic, turmeric, paprika, black pepper and sea salt.
- Arrange potato pieces standing up in a small oven-proof dish or tin. Cover with foil and cook for 40 minutes.
- Remove potato from oven and remove foil. Add the coconut cream to the potatoes and return to oven uncovered for another 30 minutes.
- Serve with sesame seeds, walnuts or dukkha.
