Summer Detox Salad

This summer salad is light, refreshing and tasty too!

Ingredients

2 small cucumbers
1 small seedless watermelon
1 basket of raspberries
¼ thinly sliced red onion
A large handful of chopped mint leaves plus extra for garnish
2tbsp fruity olive oil
Feta cheese
Balsamic glaze

Instructions

  1. Cut the watermelon into evenly sized pieces and place in a bowl.
  2. Cut the cucumbers lengthwise before slicing horizontally to give 1cm slices. Add to watermelon
  3. Add the mint, raspberries, feta and onion and gently mix until combined.
  4. Divide salad between four plates and scatter with remaining mint.
  5. Drizzle over a little balsamic glaze and the olive oil.
  6. Refrigerate and serve lightly chilled.
