Salmon, Zucchini & Turmeric Patties

If you are looking for a lighter yet healthy lunch, then this quick and easy recipe is just the thing, and it takes just twenty minutes to prepare and cook.


200g can drained salmon

¾ cup wholemeal breadcrumbs

1 grated zucchini with excess moisture squeezed out

2 eggs

3/4tsp ground turmeric

1/2tsp dried herbs

¼ cup chopped dill

1/2tsp garlic powder

¼ cup chopped parsley

Juice of ½ lemon

½ finely diced red onion

Olive oil spray

Pinch of salt


  1. Mix all the ingredients in a bowl apart from the olive oil. Take approximately a quarter of a cup of mix and form salmon patties.
  2. Heat a non-stick frying pan over a medium-high heat and spray with olive oil.
  3. Cook the patties for 3 to 5 minutes on each side until cooked through and browned.
