Quick and Easy Thai Beef Salad

When you need something quick to eat, this tasty recipe is just the thing and only takes ten minutes to prepare.

Ingredients

500g beef rump steak
1/3 cup chilli and lime vinaigrette
250g cherry tomatoes
150g mixed salad leaves
2tsp sesame oil
2tsp soy sauce
125g Thai style rice noodles
5 baby cucumbers that are sliced thinly lengthways
Fresh mint leaves, crushed peanuts and sliced red chilli for serving

Instructions

  1. Mix together the soy sauce and sesame oil in a small jug and rub over meat. Warm a chargrill pan over medium-high heat and cook beef for two minutes on each side, or until cooked to your preference. Transfer beef to a plate and leave to rest for two minutes before slicing thinly.
  2. Place noodles in a heatproof bowl and cover with boiling water. Allow to stand for 3 minutes or until tender before draining noodles and refreshing under running cold water. Leave to drain thoroughly.
  3. Mix together the salad leaves, noodles, tomatoes, cucumber vinaigrette and beef and arrange on a large serving plate. Top with peanuts, sliced chilli and mint and serve.
