Mushroom & Butter Bean Ragu with ‘Cheesy’ Polenta

For the Mushroom & Butter Bean Ragu:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 250g mushrooms, sliced
  • 400g canned butter beans, drained and rinsed
  • 400g canned diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish


For the ‘Cheesy’ Polenta:


  • 1 cup polenta
  • 3 cups vegetable broth
  • 1 cup almond milk
  • 1/2 cup nutritional yeast
  • 2 tablespoons vegan butter
  • Salt and pepper to taste




  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  2. Add the sliced mushrooms to the saucepan and cook until they release their moisture and turn golden brown.
  3. Stir in the drained and rinsed butter beans, canned diced tomatoes, dried thyme, salt, and pepper. Let the ragu simmer on low heat for about 15 minutes, allowing the flavours to meld together.
  4. While the ragu simmers, prepare the ‘cheesy’ polenta. In a separate saucepan, bring the vegetable broth and almond milk to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps.
  5. Reduce the heat to low and let the polenta cook for about 10 minutes until it thickens and becomes creamy.
  6. Remove the polenta from the heat and stir in the nutritional yeast, vegan butter, salt, and pepper.
