Mumma’s Best Ever Parmesan Meatballs

Meatballs must be one of the ultimate comfort foods, and this recipe is extra-tasty.

Ingredients

450g ground beef
450g ground pork
250g fresh mozzarella sliced into bite-sized pieces
5 cups tomato sauce
3 slices stale white bread
11/4cups finely grated parmesan
2 cloves finely chopped garlic
1/2cup finely chopped onion
1tsp pepper
1tbsp salt
1/2cup freshly chopped parsley
1/2cup milk
Olive oil

Instructions

  1. Preheat oven to 200°C. Cut off crusts from bread and cut bread into small pieces. Take a small bowl and pour milk over bread and set aside until all the liquid is absorbed, for approximately 10 minutes.
  2. In a large bowl, mix the meat, salt and pepper, bread, garlic, a quarter cup of Parmesan cheese, onion and parsley. Shape the mixture into small golf -sized balls, making approximately 25 meatballs. It is easier to shape the meatballs if you wet your hands first.
  3. In a large skillet, add 1 cm of olive oil and heat on medium-high. Fry the meatballs in batches, occasionally turning until each side is golden brown, for approximately 8 to 10 minutes. Transfer meatballs to a paper towel covered plate.
  4. In a 20 x 32 cm baking dish, place a thin layer of tomato sauce, topping it with half of the remaining Parmesan cheese. Place the meatballs over the Parmesan cheese and top with mozzarella. Coat with remaining sauce and repeat the layering process. Finish by pouring over the entire sauce and sprinkling with Parmesan cheese.
  5. Bake the casserole until bubbling, for approximately 40 minutes. Allow to cool for a few minutes before serving.
