Ingredients

Pancakes

2tbsp granulated sugar

2 cups Bisquick mix

2 eggs

1/2tsp cinnamon

½ cup pumpkin puree

1 cup milk

Pinch of nutmeg

Red and yellow food colouring (combined to make orange)

Syrup

1tsp vanilla

½ cup granulated sugar

2tsp cinnamon

½ cup light brown sugar

1 cup water

Black food colouring

Instructions

  1. Make the syrup by bringing the sugars, cinnamon, flour, water and vanilla to a boil in a small saucepan, stirring continually. Add enough black food colouring to dye the mixture a suitable shade and boil for a few more minutes until it has thickened. Remove from heat and set aside.
  2. Make the pancakes by stirring together the pumpkin purée, milk, Bisquick, sugar, eggs, nutmeg and cinnamon, and add enough food colouring to dye the mixture orange.
  3. Cook the pancakes by spooning the batter onto a hot, greased griddle, cooking on each side for two or three minutes until golden and cooked through.
  4. Serve the pancakes warm and topped with syrup.
