Edible Sunscreen Watermelon and Grapefruit Salad

This tasty and refreshing salad takes just 15 minutes to prepare, and it works well with fresh, steamed prawns or with a Hawaiian style chicken.


1 peeled and segmented grapefruit or 2 blood oranges
½ cup sliced strawberries
2 cups chopped watermelon
4-5 cups mixed greens
¼ cup coarsely chopped walnuts

Pomegranate Dressing

¼ cup pomegranate juice
1tsp lemon zest
2tbsp apple cider vinegar
½ cup coconut milk
Freshly ground salt and black pepper


  1. Combine all the dressing ingredients in a bowl. Season to taste and whisk until thoroughly mixed.
  2. Arrange the greens in a salad bowl and add all the fruit.
  3. Drizzle the dressing over the salad and top with walnuts.
