Curried Sweet Potato and Lentil Stew

Packed with fragrant spices, this warming stew smells wonderful as it cooks.


1 finely chopped onion

1 finely chopped carrot

1 finely chopped red pepper

2 small sweet potatoes cubed

1 454ml can tomatoes

2 cups vegetable broth

2 cups water

1 cup dried red lentils

2tbsp minced garlic

1tbsp freshly grated ginger


11/2tsp salt

1/4tsp black pepper

1/4tsp ground cumin

2tbsp dried chopped onions

2tsp garlic powder

1/2tsp dried mustard powder

11/2tsp hot curry powder


  1. Mix together all spices in a bowl and set aside
  2. Add onion, red pepper, carrot to a large stockpot and soften over medium heat for 5 minutes. Add a little water to prevent sticking.
  3. Add ginger and garlic and sauté for 30 seconds, then add the spice mix, cooking until fragrant.
  4. Add diced tomatoes, broth and water and bring to a boil, then reduce to a simmer.
  5. Add the sweet potatoes and red lentils, stirring well before covering and cooking for 25 minutes. Check lentils and potatoes are cooked, adjust seasoning if needed and serve.
