Crunchy Cashew Nut Salad with Sesame Dressing

Are you fed up with eating the same old boring salad? Try this tasty recipe loaded with healthy fresh veggies, which is super quick to prepare.


2 cups carrots cut into matchsticks or shredded

½ head each of green and purple cabbage, shredded

1-2 cups roasted cashew nuts

1 cup chopped fresh cilantro

2 cups cooked edamame

2 cups crunchy chow mein noodles

½ cup sliced green onions

Your choice of protein, such as chicken, tofu or prawns


2tbsp sesame oil

1tsp salt

2tbsp sugar

¼ cup olive oil

3tbsp white vinegar

A pinch of garlic powder

¼ cup of mayonnaise or Greek yoghurt (this is optional and will create a creamier dressing)


  1. Place all the dressing ingredients into a screw-topped jar and shake well until smooth.
  2. Toss together all the salad ingredients and drizzle with the dressing. Serve straight away.
