Apple and Broccoli Salad


This light summer salad is healthy, easy to make and very tasty. Pecans add a nice crunchy element.


1 large thinly sliced pink lady apple

80g baby spinach

2 medium broccoli heads

4 trimmed and thinly sliced radishes

2tbsp extra virgin olive oil

¼ cup apple cider vinegar

1/3 cup chopped pecans

1tsp wholegrain mustard

1tbsp finely chopped chives


  1. Cut the broccoli into florets, removing the stalks. Cut one stalk into matchsticks and discard the remaining stalk. Place apple, radishes, broccoli florets and stalk, and the baby spinach into a bowl. Mix to combine.
  2. To make the dressing, place mustard, oil, vinegar and chives into a small bowl and season with salt and pepper. Whisk until thoroughly combined.
  3. Arrange apple and broccoli mix on a serving plate, drizzle with dressing and top with chopped pecans.
